Ingredients

For the Rub:

Quick Steps

1️⃣ Preheat Oven and Prep Potatoes:
Preheat oven to 220°C/430°F (standard) or 200°C/390°F (fan-forced/convection). Toss 800g baby potatoes with 1 tbsp olive oil, salt, and pepper. Scatter on a baking tray and bake for 15 minutes.

2️⃣ Make the Rub:
In a small bowl, mix 1 tsp Worcestershire sauce, 2 tbsp ketchup, 1 tbsp soy sauce, 2 tbsp brown sugar, 1 tbsp olive oil, 1 minced garlic clove, and 2 tsp apple cider vinegar.

Slather 4 pork chops with the rub on both sides, reserving some for basting.

4️⃣ Add Pork to Tray:
Remove the tray from the oven, toss potatoes, and push them to the edges. Place pork chops on the tray and bake for 15 minutes.

Switch oven to high broiler/grill (shelf ~20cm/8" from heat). Flip pork, spoon reserved rub over, and dab on sides. Broil for 7-10 minutes until caramelized.

6️⃣ Finish with Juices:
Remove tray, brush pork with golden juices from the tray, and pop back under the broiler for 1-2 minutes to finish.

7️⃣ Serve:
