Recipe: Chow Mian 肌肉炒面

Ingredients

✅ 2 tbsp canola oil (or high-smoke-point oil) 🛢️

✅ 1 lb boneless chicken breasts or thighs, cubed 🍗

✅ 1 red bell pepper, sliced 🫑

✅ 1 cup snap peas 🥗

✅ 1 cup shredded cabbage (or coleslaw mix) 🥬

✅ 1 cup matchstick carrots 🥕

✅ 3 cloves garlic, minced 🧄

✅ 1 tsp fresh ginger, minced (or ½ tsp powdered) 🫚

✅ ½ tsp red pepper flakes (optional, adjust for heat) 🌶️

✅ 2 cups chicken broth (or vegetable broth/water) 🥣

✅ ¼ cup soy sauce 🥢

✅ 2 tbsp hoisin sauce 🥄

✅ 375g (13 oz) whole-grain spaghettini, ramen, or chow mein noodles 🍜

✅ Optional: 1 tbsp cornstarch + 2 tbsp water (for thickening) 🌾

✅ Sesame oil, for finishing (optional) 🛢️

Quick Steps

1️⃣ Cook the Chicken:
Heat 2 tbsp canola oil in a large skillet over medium-high heat. Add 1 lb cubed chicken and stir-fry until mostly browned, about 4–5 minutes.

2️⃣ Add Vegetables:
Stir in 1 sliced red bell pepper, 1 cup snap peas, 1 cup shredded cabbage, and 1 cup matchstick carrots. Cook for 3–4 minutes until slightly softened.

3️⃣ Add Aromatics:
Stir in 3 minced garlic cloves, 1 tsp minced ginger, and ½ tsp red pepper flakes. Cook for 1 minute until fragrant.

4️⃣ Add Liquids and Noodles:
Pour in 2 cups of broth, ¼ cup of soy sauce, and 2 tbsp hoisin sauce. Bring to a boil over medium-high heat. Add 375g noodles, reduce the heat to medium, and cook uncovered for ~5 minutes, stirring frequently to prevent clumping.

5️⃣ Finish Cooking:
Cover and cook for 3–4 more minutes until noodles are al dente and most liquid is absorbed. For a thicker sauce, stir in cornstarch slurry and cook until thickened.

6️⃣ Serve:
